Trained at the prestigious Associazione Verace Pizza Napoletana, Francesco follows traditional techniques—slow-proving the dough for over 20 hours, sourcing key ingredients from Italy, and baking each pizza in a 450–470°C wood-fired oven for just 60–90 seconds. What began as a humble takeaway in 2012 is now a fully licensed local favourite, recognised as one of Auckland’s best pizzerias.
